Instructions
1. Prepare the kataifi filling:

Stir in the pistachio butter, tahini, and salt until the mixture is well-combined.
2. Melt and decorate the chocolate:
White chocolate (optional): If decorating, melt the white chocolate using a double boiler or microwave. Mix in the green food coloring and drizzle the colored chocolate inside the molds.
Milk chocolate: Melt two-thirds of the milk chocolate in a double boiler until smooth.
Coat the molds: Pour enough melted milk chocolate into each mold to cover the bottom and sides. Scrape away any excess chocolate and refrigerate for 5–10 minutes, until the chocolate is set.
3. Assemble the bars:
Fill the molds: Spoon the kataifi and pistachio mixture into the molds, pressing it into an even layer with a spatula.
Seal the bars: Top the molds with the remaining melted milk chocolate, spreading it smoothly to cover the filling completely. Gently tap the mold to remove any air bubbles.
Refrigerate: Place the mold in the refrigerator for at least 2 hours, or until the chocolate is completely set and firm.
4. Finish and serve:
Once set, carefully remove the chocolate bars from their molds.
If desired, trim any rough edges with a knife.
Enjoy the bars immediately, or store them in an airtight container in the refrigerator to keep them from melting.
